- 1 lb Italian sausage (sweet or hot)
- 2 bell peppers (red and green), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 1/4 cup chicken broth
- Fresh parsley, chopped (for garnish)

Heat olive oil in a large skillet over medium heat. Add the sausages and cook until browned on all sides, about 5-7 minutes. Remove from the skillet and set aside.
In the same skillet, add the sliced onions and bell peppers. Sauté for 5 minutes until they begin to soften.
Add the minced garlic, oregano, basil, red pepper flakes, salt, and black pepper. Stir well and cook for another 2 minutes until fragrant.
Slice the cooked sausages into bite-sized pieces and return them to the skillet. Stir to combine with the vegetables.
Pour in the chicken broth and bring to a simmer. Reduce heat to low, cover, and let cook for 5-7 minutes to meld the flavors.
