- 1 can (5 oz) tuna in water, drained
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped red onion
- 1 tbsp lemon juice
- Salt and black pepper to taste
- 4 slices of bread (sourdough or whole wheat)
- 4 slices cheddar cheese
- 2 tbsp butter, softened

Prepare the tuna mixture: In a bowl, combine the drained tuna, mayonnaise, Dijon mustard, chopped celery, red onion, and lemon juice. Mix well and season with salt and black pepper to taste.
Butter the bread: Spread softened butter on one side of each bread slice. This will be the outer side when grilling.
Assemble the sandwiches: Place two slices of bread, buttered side down, on a clean surface. Divide the tuna mixture evenly between the two slices, spreading it out evenly.
Add cheese: Place two slices of cheddar cheese on top of the tuna mixture on each sandwich. Top with the remaining bread slices, buttered side up.
Grill the sandwiches: Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
