- 1/2 cup shredded cheddar cheese
- 1/4 cup kimchi, drained and chopped
- 1 tbsp butter, softened
- 1 tsp gochujang (optional)
- 1 tsp mayonnaise

Prepare the kimchi: Drain the kimchi and chop it into small pieces. If using, mix the kimchi with gochujang for extra spice.
Butter the bread: Spread softened butter on one side of each bread slice. This will be the outer side when grilling.
Assemble the sandwich: On the unbuttered side of one bread slice, layer half the shredded cheese, followed by the kimchi mixture, then the remaining cheese. Top with the second bread slice, buttered side out.
Heat the pan: Preheat a skillet or griddle over medium-low heat.
Grill the sandwich: Place the sandwich in the skillet and cook for 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.
Serve: Remove from heat, let it cool for a minute, then slice and serve hot.
