Preheat the oven to 375°F (190°C). Let the pork loin sit at room temperature for 20-30 minutes before cooking.
Pat the pork loin dry with paper towels. This helps achieve a crispy crust.
In a small bowl, mix minced garlic, olive oil, rosemary, thyme, salt, and black pepper to create a rub.
Rub the mixture evenly all over the pork loin, making sure to coat all sides.
Place the pork loin on a roasting rack in a roasting pan. Pour chicken broth into the bottom of the pan.
Roast in the preheated oven for about 45 minutes, or until the internal temperature reaches 145°F (63°C).
Remove from the oven and let the pork loin rest for 10-15 minutes before slicing.
