Instructions
Heat olive oil in a large pot over medium-high heat. Add pork chunks and sear until browned on all sides, about 5 minutes.
Add diced onion and minced garlic to the pot. Cook until softened, about 3 minutes.
Stir in cumin, smoked paprika, oregano, salt, and black pepper. Cook for 1 minute until fragrant.
Pour in chicken broth and lime juice. Bring to a simmer, then reduce heat to low. Cover and cook for 1.5-2 hours until pork is tender and shreds easily.
Remove pork from pot and shred with two forks. Return to pot and mix with cooking juices.
Warm corn tortillas on a dry skillet or over an open flame for about 30 seconds per side.
Assemble tacos: Place shredded pork on tortillas, then top with cilantro, diced onion, salsa verde, and avocado slices.
Chef's Tips
- For extra flavor, marinate the pork overnight in the spice mixture before cooking.
- Double the recipe and freeze half for quick meals later.
- Toast your tortillas slightly for better texture and flavor.
- Let the cooked pork rest for 10 minutes before shredding for juicier results.
- Serve with lime wedges for squeezing over the tacos.
- For authentic street-style tacos, use two small tortillas per taco.
