Instructions
Brown the pork: Heat a large pot over medium-high heat. Add the cubed pork shoulder and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
Sauté the aromatics: In the same pot, add the diced onion and minced garlic. Cook until softened, about 3-4 minutes.
Combine ingredients: Return the pork to the pot. Add the tomato sauce, brown sugar, molasses, mustard, smoked paprika, salt, and black pepper. Stir well to combine.
Add beans and water: Stir in the drained navy beans and water. Bring the mixture to a boil.
Simmer: Reduce heat to low, cover, and simmer for 1.5 to 2 hours, stirring occasionally, until the pork is tender and the flavors meld together.
Adjust seasoning: Taste and adjust salt, pepper, or sweetness as needed. Serve hot.
Chef's Tips
- Slow cooker option: Transfer everything to a slow cooker and cook on low for 6-8 hours for even more tender pork.
- Spice it up: Add a pinch of cayenne or red pepper flakes for a spicy kick.
- Thicker sauce: If you prefer a thicker sauce, simmer uncovered for the last 30 minutes.
- Leftovers: This dish tastes even better the next day as the flavors deepen. Store in an airtight container in the fridge for up to 3 days.
