Instructions

1

Season the beef cubes with salt and pepper. Heat olive oil in a large pot over medium-high heat. Brown the beef in batches, then set aside.

2

In the same pot, sauté onions and garlic until fragrant, about 2 minutes. Stir in tomato paste and cook for another minute.

3

Sprinkle flour over the onions and stir well to combine. Cook for 1-2 minutes to remove the raw flour taste.

4

Gradually add beef broth while stirring to prevent lumps. Bring to a simmer.

5

Return the browned beef to the pot. Add thyme and rosemary. Cover and simmer on low heat for 1.5 hours.

6

Add carrots and potatoes. Continue simmering for another 30 minutes until vegetables are tender.

7

Adjust seasoning with salt and pepper. Serve hot with crusty bread.

Chef's Tips

  • Browning Tip: Don't overcrowd the pot when browning meat - this ensures proper caramelization.
  • Make Ahead: Stew tastes even better the next day as flavors develop.
  • Thickening: For thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir in at the end.
  • Vegetable Variations: Add mushrooms, celery or peas for extra nutrition.
  • Slow Cooker Option: After browning, transfer everything to a slow cooker and cook on low for 6-8 hours.
