Ingredients
- 1.5 lbs beef chuck, cubed
- 4 carrots, sliced
- 4 potatoes, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 2 tbsp flour
- 2 tbsp olive oil
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste

Instructions
Season the beef cubes with salt and pepper. Heat olive oil in a large pot over medium-high heat. Brown the beef in batches, then set aside.
In the same pot, sauté onions and garlic until fragrant, about 2 minutes. Stir in tomato paste and cook for another minute.
Sprinkle flour over the onions and stir well to combine. Cook for 1-2 minutes to remove the raw flour taste.
Gradually add beef broth while stirring to prevent lumps. Bring to a simmer.
Return the browned beef to the pot. Add thyme and rosemary. Cover and simmer on low heat for 1.5 hours.
Add carrots and potatoes. Continue simmering for another 30 minutes until vegetables are tender.
Adjust seasoning with salt and pepper. Serve hot with crusty bread.
