Ingredients
- 1.5 lbs beef chuck, cubed
- 4 carrots, sliced
- 4 potatoes, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- 2 tbsp olive oil
- Salt and pepper to taste

Season the beef cubes with salt and pepper. Heat olive oil in a large pot over medium-high heat and brown the beef on all sides. Remove and set aside.

In the same pot, sauté the onions and garlic until softened, about 3 minutes.

Add the tomato paste and stir for 1 minute until fragrant.

Return the beef to the pot. Add carrots, potatoes, thyme, rosemary, and beef broth. Stir well.

Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, until beef is tender.

Taste and adjust seasoning with salt and pepper if needed. Serve hot.
