Instructions
Cook the noodles: Boil lo mein noodles according to package instructions until al dente. Drain and rinse under cold water. Toss with a little oil to prevent sticking.
Marinate the pork: In a bowl, mix pork slices with 1 tbsp soy sauce, 1/2 tsp sugar, and black pepper. Let marinate for 10 minutes.
Prepare the sauce: In a small bowl, combine remaining soy sauce, oyster sauce, hoisin sauce, and sesame oil. Set aside.
Stir-fry the pork: Heat 1 tbsp oil in a wok or large pan over high heat. Add pork and stir-fry until browned, about 3-4 minutes. Remove and set aside.
Cook the vegetables: In the same wok, add remaining oil. Stir-fry garlic and ginger for 30 seconds until fragrant. Add cabbage, carrot, and bell pepper. Stir-fry for 2-3 minutes until slightly tender.
Combine everything: Return pork to the wok. Add cooked noodles and sauce. Toss everything together and stir-fry for 2 minutes until well combined and heated through. Garnish with green onions.
Chef's Tips
- Noodle Tip: Don't overcook the noodles as they will soften more when stir-fried.
- Protein Swap: Chicken, beef, or shrimp can be used instead of pork.
- Vegetable Options: Add mushrooms, bean sprouts, or snow peas for extra crunch.
- Sauce Adjustment: Add a splash of chicken broth if the noodles seem dry.
- Spice It Up: For heat, add chili oil or red pepper flakes when stir-frying.
