- 1 clove garlic, minced

- 1 green onion, sliced

Prepare the mushrooms: Clean the mushrooms thoroughly and slice them into even pieces. Shiitake mushrooms should be destemmed if using.
Make the miso glaze: In a small bowl, mix miso paste, soy sauce, mirin, and sugar until smooth. Set aside.
Heat the oil: In a large pan or wok, heat vegetable oil over medium-high heat until shimmering.
Stir-fry the aromatics: Add minced garlic and grated ginger to the pan. Stir-fry for about 30 seconds until fragrant.
