Cut the chicken breasts into bite-sized pieces, about 1-inch cubes. Pat them dry with paper towels to remove excess moisture.
In a shallow bowl, mix the flour, garlic powder, paprika, salt, and black pepper. In another bowl, beat the eggs. Place breadcrumbs in a third bowl.
Dredge each chicken piece in the flour mixture, shaking off excess. Then dip into the beaten eggs, allowing excess to drip off. Finally, coat with breadcrumbs, pressing gently to adhere.
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Make sure there's enough oil to submerge the nuggets halfway.
Fry the nuggets in batches for 3-4 minutes per side until golden brown and cooked through. Avoid overcrowding the pan.
Remove nuggets with a slotted spoon and drain on a paper towel-lined plate. Serve immediately with your favorite dipping sauces.
