Heat a grill pan over medium-high heat. Grill the chicken breasts for 4-5 minutes per side, or until fully cooked. Let them rest for 5 minutes, then slice into strips.
In a large bowl, toss the chopped romaine lettuce with Caesar dressing until evenly coated.
Add the sliced chicken, croutons, and grated Parmesan cheese to the bowl. Toss gently to combine.
Drizzle with a little extra dressing and lemon juice if desired. Season with additional salt and black pepper to taste.
Serve immediately, garnished with extra Parmesan cheese and freshly cracked black pepper.
Chef's Tips
- Crispy Lettuce: For extra crunch, soak the romaine in ice water for 10 minutes before chopping and drying thoroughly.
- Homemade Dressing: Make your own Caesar dressing with anchovies, egg yolk, garlic, and Dijon mustard for an authentic flavor.
- Grill Marks: For better grill marks, press the chicken lightly with a spatula while cooking.
- Extra Crunch: Toast the croutons in the oven with a little garlic butter for added flavor.
- Meal Prep: Store dressing separately to keep the salad fresh if preparing ahead.
