- 1.5 lbs boneless, skinless chicken thighs
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- 1 tsp salt
- 1 tbsp lemon juice
- 1/4 cup plain yogurt
- 1 red bell pepper, cut into chunks
- 1 red onion, cut into chunks
- Wooden or metal skewers

Instructions
Cut the chicken thighs into 1.5-inch cubes and place them in a large bowl.
In a separate bowl, mix olive oil, minced garlic, paprika, cumin, coriander, turmeric, black pepper, salt, lemon juice, and yogurt to create the marinade.
Pour the marinade over the chicken pieces and mix well to ensure all pieces are coated. Cover and refrigerate for at least 1 hour, preferably overnight for best flavor.
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Thread the marinated chicken pieces onto the skewers, alternating with chunks of red bell pepper and red onion.
Preheat the grill to medium-high heat. Grill the skewers for 4-5 minutes per side, or until the chicken is fully cooked and has nice grill marks.
Remove from the grill and let rest for a couple of minutes before serving.
