Instructions
Prepare the chicken: Pat the chicken thighs dry with paper towels to ensure crispy skin. Trim any excess fat if needed.
Season the chicken: In a small bowl, mix smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub the mixture evenly over the chicken thighs.
Preheat the grill: Heat your grill to medium-high (about 375°F/190°C). Brush the grates with oil to prevent sticking.
Grill the chicken: Place the chicken thighs skin-side down on the grill. Cook for 5-7 minutes until the skin is crispy and golden. Flip and cook for another 5-7 minutes.
Apply BBQ sauce: Brush a generous layer of BBQ sauce on both sides of the chicken. Continue grilling for 3-4 minutes per side, basting occasionally, until the internal temperature reaches 165°F (74°C).
Rest and serve: Remove the chicken from the grill and let it rest for 5 minutes. Serve with extra BBQ sauce on the side.
Chef's Tips
- Marinade Tip: For deeper flavor, marinate the chicken in the dry rub overnight in the fridge.
- Sauce Variations: Experiment with different BBQ sauces—spicy, honey, or bourbon-infused for unique flavors.
- Grill Marks: Avoid moving the chicken too much while grilling to get perfect grill marks.
- Indoor Option: Use a grill pan or broiler if you don’t have an outdoor grill.
- Leftovers: Store in an airtight container for up to 3 days. Reheat in the oven to keep the skin crispy.
