Instructions
Season the chicken: In a small bowl, mix chili powder, cumin, garlic powder, paprika, salt, and black pepper. Rub the mixture evenly over the chicken breasts.
Cook the chicken: Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for 6-7 minutes per side, until fully cooked. Remove from heat and let rest for 5 minutes.
Shred the chicken: Use two forks to shred the cooked chicken into bite-sized pieces.
Warm the tortillas: Heat the tortillas in a dry skillet for about 30 seconds per side, or wrap them in a damp towel and microwave for 30 seconds.
Assemble the tacos: Place a portion of shredded chicken on each tortilla. Top with lettuce, tomatoes, red onion, cilantro, cheese, and a dollop of sour cream.
Serve: Squeeze fresh lime juice over the tacos and serve immediately.
Chef's Tips
- Marinate for extra flavor: Let the chicken marinate in the spice mix for 30 minutes to an hour before cooking.
- Grill option: For a smoky flavor, grill the chicken instead of pan-frying.
- Toppings variety: Add avocado, jalapeños, or salsa for extra flavor and texture.
- Meal prep: Cook and shred the chicken ahead of time for quick assembly later.
- Tortilla tip: For extra flavor, lightly toast the tortillas on a gas flame for a few seconds.
