Instructions
Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Stir in the vanilla extract.
Divide the batter evenly between the prepared cake pans. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Once cooled, spread a layer of buttercream frosting on top of one cake layer. Place the second layer on top and frost the entire cake with the remaining buttercream.
Decorate the cake with edible glitter or gold dust and assorted sprinkles for a festive New Year's look.
Chef's Tips
- Room Temperature Ingredients: Ensure all ingredients like butter, eggs, and milk are at room temperature for a smoother batter.
- Even Layers: Use a kitchen scale to divide the batter equally between the pans for uniform cake layers.
- Cooling Time: Let the cakes cool completely before frosting to prevent the buttercream from melting.
- Edible Glitter: Apply the glitter or gold dust with a soft brush for an even and sparkling finish.
- Storage: Store the cake in an airtight container at room temperature for up to 3 days.
