Preheat oven to 325°F (165°C). Pat the pork roast dry with paper towels to ensure a crispy crust.

In a small bowl, mix minced garlic, rosemary, thyme, salt, and black pepper. Rub the mixture all over the pork roast.

Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Sear the pork roast on all sides until golden brown, about 3-4 minutes per side.

Remove the pork roast and set aside. Add onion, carrots, and celery to the pot. Sauté for 3-4 minutes until slightly softened.

Place the pork roast back into the pot on top of the vegetables. Pour in chicken broth.
