Instructions

1

Preheat the oven to 325°F (165°C). Pat the pork roast dry with paper towels to ensure a crispy crust.

2

In a small bowl, mix minced garlic, olive oil, salt, black pepper, rosemary, and thyme to create a seasoning paste.

3

Rub the seasoning paste all over the pork roast, making sure to coat it evenly.

4

Place the sliced onion, chopped carrots, and celery in the bottom of a roasting pan. Pour in the chicken broth.

5

Place the seasoned pork roast on top of the vegetables in the roasting pan. Cover with aluminum foil.

6

Roast in the preheated oven for 1.5 hours. Remove the foil and continue roasting for another 30 minutes to brown the crust.

7

Check the internal temperature with a meat thermometer; it should read 145°F (63°C). Let the roast rest for 15 minutes before slicing.

8

Serve the pork roast with the roasted vegetables and pan juices.

Chef's Tips

  • Dry the Pork: Patting the pork dry before seasoning helps achieve a crispy crust.
  • Resting Time: Letting the roast rest before slicing ensures juiciness.
  • Vegetable Base: The vegetables not only add flavor but also keep the roast moist.
  • Herb Variations: Experiment with sage or oregano for different flavor profiles.
  • Leftovers: Use leftover pork for sandwiches, tacos, or salads.
