- 1 (4-5 lb) pork shoulder roast
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp salt
- 1 tbsp black pepper
- 1 tbsp dried rosemary
- 1 tbsp dried thyme
- 1 cup chicken broth
- 1 onion, sliced
- 2 carrots, chopped
- 2 celery stalks, chopped

Instructions
Preheat the oven to 325°F (165°C). Pat the pork roast dry with paper towels to ensure a crispy crust.
In a small bowl, mix minced garlic, olive oil, salt, black pepper, rosemary, and thyme to create a seasoning paste.
Rub the seasoning paste all over the pork roast, making sure to coat it evenly.
Place the sliced onion, chopped carrots, and celery in the bottom of a roasting pan. Pour in the chicken broth.
Place the seasoned pork roast on top of the vegetables in the roasting pan. Cover with aluminum foil.
Roast in the preheated oven for 1.5 hours. Remove the foil and continue roasting for another 30 minutes to brown the crust.
Check the internal temperature with a meat thermometer; it should read 145°F (63°C). Let the roast rest for 15 minutes before slicing.
Serve the pork roast with the roasted vegetables and pan juices.
