- 2 lbs Yukon Gold potatoes
- 6 cloves garlic
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh chives (optional)

Instructions
Preheat oven to 400°F (200°C). Wrap garlic cloves in aluminum foil with a drizzle of olive oil and roast for 20 minutes until soft and golden.
Peel and cut potatoes into even chunks. Place in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil.
Reduce heat and simmer potatoes for 15-20 minutes until fork-tender. Drain well and return to the pot.
Mash potatoes with a potato masher or ricer. Squeeze roasted garlic cloves into the potatoes and mix well.
Heat butter and heavy cream in a small saucepan until butter melts. Gradually add to potatoes while mashing until smooth and creamy.
Season with salt and black pepper to taste. Garnish with fresh chives if desired. Serve warm.
