Prepare the Brussels sprouts: Trim the ends and cut them in half. Remove any loose or yellowed leaves.
Cook the bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pan.
Sauté the Brussels sprouts: Add olive oil to the bacon fat if needed. Place the Brussels sprouts cut-side down in the skillet. Cook undisturbed for 5-6 minutes until they develop a golden-brown crust.
Season and stir: Flip the Brussels sprouts, then add minced garlic, salt, and black pepper. Stir and cook for another 5-6 minutes until tender.
Add the bacon back: Return the crispy bacon to the skillet and toss everything together. Cook for another 1-2 minutes to combine flavors.
Finish with balsamic (optional): Drizzle with balsamic vinegar for a tangy touch, then serve hot.
