Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet.
Add the halved Brussels sprouts to the skillet with the bacon fat. Toss to coat evenly. Season with salt and black pepper.
Transfer the Brussels sprouts to the prepared baking sheet. Drizzle with olive oil and roast in the preheated oven for 15-20 minutes, stirring halfway, until tender and caramelized.
In the last 5 minutes of roasting, sprinkle the minced garlic over the Brussels sprouts and return to the oven to allow the garlic to become fragrant.
Remove from the oven and toss the roasted Brussels sprouts with the crispy bacon. Drizzle with balsamic glaze before serving.
Chef's Tips
- Crispy Bacon: For extra crispiness, bake the bacon in the oven at 400°F (200°C) for 15-20 minutes instead of pan-frying.
- Garlic Tip: Add the garlic towards the end to prevent it from burning and becoming bitter.
- Variation: Add toasted pecans or walnuts for extra crunch and flavor.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best texture.
- Vegan Option: Substitute bacon with smoked tempeh or coconut bacon for a plant-based version.
