Instructions
Prepare the shrimp: Rinse the shrimp under cold water and pat dry with paper towels.
Boil the shrimp: In a large pot, bring 4 cups of water to a boil. Add lemon slices, bay leaves, peppercorns, and salt. Simmer for 5 minutes.
Cook the shrimp: Add the shrimp to the boiling water and cook for 2-3 minutes until they turn pink and opaque. Do not overcook.
Chill the shrimp: Drain the shrimp and immediately transfer to a bowl of ice water to stop the cooking process. Let them cool for 5 minutes, then drain again.
Make the cocktail sauce: In a small bowl, mix ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Adjust seasoning to taste.
Serve: Arrange the chilled shrimp on a platter with the cocktail sauce in the center. Garnish with fresh parsley and lemon wedges.
Chef's Tips
- Freshness Check: Use fresh shrimp for the best flavor and texture. Look for shrimp that smell like the ocean, not fishy.
- Chilling Tip: Let the shrimp chill in the fridge for at least 30 minutes before serving for a refreshing taste.
- Sauce Variations: Add a splash of vodka or a pinch of smoked paprika to the cocktail sauce for extra depth.
- Presentation: Serve the shrimp in a martini glass for an elegant touch.
- Leftovers: Store leftover shrimp in an airtight container in the fridge for up to 2 days.
