- 1 baguette or Italian bread
- 4 ripe tomatoes
- 1/4 cup fresh basil leaves
- 2 cloves garlic
- 3 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste

Prepare the bread: Slice the baguette into 1/2-inch thick pieces. Arrange on a baking sheet.
Toast the bread: Brush both sides of each slice lightly with olive oil. Toast under broiler for 1-2 minutes per side until golden brown.
Prepare the topping: Dice the tomatoes and place in a bowl. Finely chop the basil and add to tomatoes.
Season the topping: Mince the garlic and add to tomato mixture. Drizzle with olive oil and balsamic vinegar. Add salt and pepper to taste. Mix gently.
Rub the toast: Take a peeled garlic clove and rub it lightly over one side of each toasted bread slice.
Assemble the bruschetta: Spoon the tomato mixture generously onto each bread slice. Drizzle with a little more olive oil if desired.
Serve immediately while the bread is still crisp and the tomatoes are fresh.
