Instructions
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
Slice each date lengthwise to create an opening, but do not cut all the way through.
Fill each date with a small amount of goat cheese or cream cheese, about 1/2 teaspoon per date.
Wrap each stuffed date with a half-slice of bacon, securing it with a toothpick.
Arrange the wrapped dates on the prepared baking sheet, spacing them evenly.
Sprinkle with black pepper and smoked paprika. Drizzle lightly with honey if desired.
Bake for 18-20 minutes, or until the bacon is crispy and golden brown.
Let cool for a few minutes before serving. Enjoy warm!
Chef's Tips
- Cheese Variations: Try blue cheese or manchego for a different flavor profile.
- Crispy Bacon: For extra crispiness, broil for the last 2-3 minutes, watching carefully to avoid burning.
- Make Ahead: Assemble the dates up to a day in advance and refrigerate until ready to bake.
- Serving Suggestion: Serve with a drizzle of balsamic glaze for added sweetness and tang.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best texture.
