Instructions
Marinate the beef: In a bowl, mix the beef slices with soy sauce, oyster sauce, and cornstarch. Let it marinate for at least 10 minutes.
Prepare the vegetables: Wash and cut all vegetables into uniform sizes for even cooking.
Heat the wok: Place a wok or large skillet over high heat. Add vegetable oil and swirl to coat the surface.
Cook the beef: Add the marinated beef to the hot wok. Stir-fry for 2-3 minutes until browned but not fully cooked. Remove and set aside.
Stir-fry vegetables: In the same wok, add garlic and ginger. Stir for 30 seconds until fragrant. Add all vegetables and stir-fry for 3-4 minutes until crisp-tender.
Combine everything: Return the beef to the wok with vegetables. Stir-fry for another 1-2 minutes until everything is well combined and heated through.
Finish with sesame oil: Drizzle with sesame oil and toss to combine. Garnish with green onions before serving.
Chef's Tips
- Slice beef thinly against the grain for maximum tenderness.
- Have all ingredients prepped and ready before starting to cook as stir-frying is fast.
- Use high heat for authentic wok hei (breath of the wok) flavor.
- Substitute vegetables based on what's in season or available.
- For extra sauce, mix 1/2 cup beef broth with 1 tbsp cornstarch and add during the final cooking step.
- Serve immediately over steamed rice for best texture.
