Preheat oven to 375°F (190°C).

In a large skillet, brown ground beef over medium heat. Drain excess fat.
Add onion, carrots, and garlic to the skillet. Cook until vegetables soften, about 5 minutes.
Stir in tomato paste, Worcestershire sauce, thyme, beef broth, and peas. Simmer for 10 minutes until thickened. Season with salt and pepper.
Transfer beef mixture to a baking dish. Spread mashed potatoes evenly on top. Sprinkle with cheddar cheese.
Bake for 20-25 minutes until the top is golden and bubbly. Let rest for 5 minutes before serving.
Chef's Tips
- For extra flavor, add a splash of red wine to the beef mixture while simmering.
- Make ahead: Assemble the pie and refrigerate overnight before baking.
- For a crispy top, broil the pie for the last 2-3 minutes of baking.
- Use leftover roast beef instead of ground beef for a richer taste.
- Freeze leftovers in individual portions for quick meals later.
