Instructions
Cook the rice according to package instructions and set aside.
Heat 1 tbsp oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it into small pieces.
Drain excess fat from the beef. Add taco seasoning and 1/4 cup water. Simmer for 5 minutes until thickened.
In a separate pan, heat black beans with a pinch of salt. Mash slightly for a creamier texture.
Warm tortillas in a dry skillet or microwave for 20 seconds to make them pliable.
Assemble burritos: Layer rice, beef, beans, cheese, tomatoes, onions, and cilantro on each tortilla. Drizzle with sour cream and add avocado slices.
Fold sides of tortilla inward, then roll tightly from the bottom to enclose filling completely.
Optional: Heat 1 tbsp oil in a skillet and lightly toast each burrito seam-side down for 1-2 minutes until golden and crisp.
Chef's Tips
- Tortilla Tip: For extra pliability, lightly brush tortillas with water before warming.
- Protein Swap: Substitute beef with chicken, pork, or tofu for variety.
- Make Ahead: Prepare fillings in advance for quick assembly later.
- Freezing: Wrap unburritos tightly in foil and freeze for up to 3 months.
- Spice Level: Adjust heat with jalapeños or hot sauce to taste.
- Vegetable Boost: Add sautéed bell peppers or corn for extra nutrition.
