- 1 can black beans, drained and rinsed
- 1 cup cooked quinoa
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1 clove garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg (or flax egg for vegan)
- 2 tbsp olive oil
- 4 whole wheat buns
- Lettuce, tomato, avocado for serving

Instructions
In a large bowl, mash the black beans with a fork or potato masher, leaving some chunks for texture.
Add the cooked quinoa, breadcrumbs, onion, garlic, cumin, paprika, salt, and pepper to the bowl. Mix well to combine.
Add the egg (or flax egg) and mix until the mixture holds together. If too dry, add a tablespoon of water.
Divide the mixture into 4 equal portions and shape into patties about 1/2 inch thick.
Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes per side, until golden brown and crispy.
Toast the whole wheat buns lightly if desired. Assemble the burgers with lettuce, tomato, avocado, and your favorite condiments.
