Instructions
Preheat the oven to 325°F (165°C). Place the ham on a rack in a roasting pan, cut side down.
Score the ham: Using a sharp knife, make shallow diagonal cuts in a diamond pattern across the surface of the ham.
Prepare the glaze: In a small saucepan, combine honey, brown sugar, Dijon mustard, apple cider vinegar, cloves, cinnamon, and nutmeg. Heat over medium heat until the sugar dissolves, stirring occasionally.
Brush the ham generously with half of the glaze, making sure to get into the scored cuts.
Bake the ham uncovered for 1 hour, basting with the remaining glaze every 20 minutes.
Increase the oven temperature to 400°F (200°C) and bake for an additional 15-20 minutes until the glaze is caramelized and sticky.
Remove from the oven and let the ham rest for 10-15 minutes before slicing and serving.
Chef's Tips
- Ham Selection: Choose a fully cooked, bone-in ham for the best flavor and texture.
- Glaze Variations: Experiment with adding orange juice, maple syrup, or bourbon to the glaze for different flavor profiles.
- Basting: For an extra glossy finish, baste the ham more frequently during the last 30 minutes of cooking.
- Leftovers: Store leftover ham in an airtight container in the fridge for up to 5 days. Use in sandwiches, soups, or omelets.
- Carving Tip: Slice the ham against the grain for tender pieces.
