Instructions
Prepare the lobster: Fill a large pot with water and bring to a rolling boil. Add 2 tbsp of salt per quart of water.
Cook the lobster: Carefully place the live lobsters headfirst into the boiling water. Cover and cook for 8-12 minutes (8 mins for 1 lb, add 3 mins per additional 1/2 lb).
Make the butter sauce: While lobster cooks, melt butter in a small saucepan over low heat. Add minced garlic and cook for 1 minute until fragrant. Stir in parsley, salt, pepper, and paprika.
Drain and cool: When lobsters turn bright red, remove from water with tongs and let drain in a colander for 2 minutes.
Serve: Place lobsters on a serving platter with lemon halves. Serve immediately with warm butter sauce on the side.
Eating guide: Twist off claws and crack with a lobster cracker. Split the tail with kitchen shears and remove meat. Dip in butter sauce and enjoy!
Chef's Tips
- Freshness check: Choose lively lobsters that move their legs and claws when picked up.
- Humane method: For less stress, chill lobsters in freezer for 30 minutes before cooking.
- Butter options: Clarify the butter for a richer, nuttier flavor.
- Grill option: After boiling, split lobsters and grill for 2-3 minutes for smoky flavor.
- Leftovers: Remove all meat and store in airtight container for up to 2 days. Great for lobster rolls.
- Garnish: Sprinkle with extra parsley and serve with crusty bread for soaking up butter.
