Instructions
Prepare the lobsters: Place lobsters in freezer for 15 minutes to humanely sedate them before cooking.
Bring a large pot of salted water to boil. Boil lobsters for 5 minutes, then remove and let cool slightly.
Twist off lobster tails and claws. Crack claws slightly with back of knife. Remove tail meat from shells, keeping intact.
Melt butter in large skillet over medium-low heat. Add garlic and cook until fragrant (about 1 minute).
Add lobster pieces to butter. Spoon butter over lobster continuously for 4-5 minutes until fully cooked and opaque.
Stir in thyme and half the parsley. Season with salt and pepper. Serve immediately with lemon wedges and remaining parsley.
Chef's Tips
- Freshness Check: Ensure live lobsters are active with curled tails when picked up - this indicates freshness.
- Butter Control: For richer flavor, use clarified butter which has higher smoke point.
- Alternative Cooking: Can grill lobster tails for smoky flavor - brush with butter while grilling.
- Serving Suggestion: Serve with drawn butter for dipping and crusty bread to soak up juices.
- Wine Pairing: A crisp Chardonnay or buttery Chablis complements the rich lobster perfectly.
