Instructions
Preheat oven to 375°F (190°C). Slice the baguette into 1/2-inch thick pieces on a slight diagonal for larger surface area.
Arrange bread slices on a baking sheet. Brush both sides lightly with olive oil. Toast in oven for 5-7 minutes per side until golden and crisp.
While bread toasts, dice tomatoes finely. Chop basil leaves. Mince garlic cloves.
In a bowl, combine tomatoes, basil, 1 tbsp olive oil, salt, and pepper. Let sit for flavors to meld.
Remove toasted bread from oven. While still warm, rub one side of each slice with the remaining garlic clove (cut in half) for subtle garlic flavor.
Top each garlic-rubbed crostini with tomato mixture. Drizzle with remaining olive oil and serve immediately.
Chef's Tips
- Bread Selection: Use day-old bread for better texture that won't get soggy.
- Garlic Tip: For stronger garlic flavor, mince some garlic into the tomato mixture.
- Variations: Add mozzarella, prosciutto, or roasted peppers for different flavors.
- Make Ahead: Toast bread up to 2 hours in advance, but add toppings just before serving.
- Serving: Arrange on a wooden board for rustic presentation at parties.
