- 1 baguette or Italian bread
- 4 ripe tomatoes
- 2 cloves garlic
- 1/4 cup fresh basil leaves
- 3 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste

Prepare the bread: Slice the baguette into 1/2-inch thick pieces on a diagonal. Arrange slices on a baking sheet.
Toast the bread: Brush both sides of each slice lightly with olive oil. Toast under broiler for 1-2 minutes per side until golden brown.
Garlic rub: Peel and cut one garlic clove in half. While bread is still warm, rub the cut side of garlic on one side of each toast.
Prepare tomatoes: Dice tomatoes and place in a bowl. Finely chop remaining garlic and basil, then add to tomatoes.
Season mixture: Add 2 tbsp olive oil and balsamic vinegar to tomato mixture. Season with salt and pepper to taste. Let sit for 10 minutes.
Assemble: Spoon tomato mixture onto each toast piece. Drizzle with remaining olive oil and serve immediately.
