- 1 whole white fish (such as sea bass or tilapia, about 1.5 lbs)
- 2-inch piece of ginger, julienned
- 4 scallions, cut into 2-inch pieces
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice wine or sherry
- 1 tsp sugar
- 1 red chili, sliced (optional)
- Fresh cilantro for garnish

Clean the fish thoroughly, removing scales and guts. Make a few diagonal cuts on both sides of the fish to help it cook evenly.
Place the fish on a heatproof plate that fits inside your steamer. Stuff some ginger and scallions into the cavity and lay the rest on top of the fish.
In a small bowl, mix soy sauce, sesame oil, rice wine, and sugar. Pour half of this sauce over the fish.
Bring water in the steamer to a boil. Place the plate with the fish in the steamer, cover, and steam for about 10-12 minutes, depending on the size of the fish.
Check if the fish is cooked by inserting a fork into the thickest part. The flesh should be opaque and flake easily.
Remove the fish from the steamer and pour the remaining sauce over it. Garnish with fresh cilantro and sliced red chili if desired. Serve immediately.
