Ingredients
- 8 oz chow mein noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 cup cabbage, shredded
- 1 cup carrots, julienned
- 1 cup bell peppers, sliced
- 1 cup bean sprouts
- 2 green onions, chopped
- 1 cup cooked chicken, shrimp, or tofu (optional)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1/2 tsp sugar
- 1/4 tsp white pepper

Instructions
Cook the noodles according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Toss with a little oil to prevent sticking.
Heat a wok or large skillet over high heat. Add 1 tbsp oil and swirl to coat the pan.
Add garlic and ginger, stir-fry for 30 seconds until fragrant. Add protein if using and cook until nearly done.
Push ingredients to one side, add remaining oil. Add cabbage, carrots, and bell peppers. Stir-fry for 2-3 minutes until slightly softened.
Add noodles, bean sprouts, and green onions. Toss everything together.
Mix soy sauce, oyster sauce, sesame oil, sugar, and white pepper in a small bowl. Pour over noodles and toss to coat evenly.
Stir-fry for another 2 minutes until everything is well combined and heated through. Serve immediately.
