Instructions
Preheat the oven to 325°F (165°C). Place the ham on a rack in a roasting pan, fat side up.
Score the ham: Using a sharp knife, make shallow diagonal cuts in a diamond pattern across the surface of the ham.
Prepare the glaze: In a saucepan, combine pineapple juice, brown sugar, honey, Dijon mustard, and ground cloves. Simmer over medium heat until slightly thickened, about 5 minutes.
Brush half of the glaze over the ham, ensuring it gets into the scored cuts. Arrange pineapple slices on top of the ham, securing them with toothpicks if needed. Add a cherry in the center of each pineapple slice if desired.
Bake the ham uncovered for about 1 hour 30 minutes, basting with the remaining glaze every 30 minutes.
Let the ham rest for 15 minutes before slicing. Serve warm with any remaining pan juices.
Chef's Tips
- Ham Selection: Choose a fully cooked, bone-in ham for the best flavor and texture.
- Glaze Variations: Substitute orange juice for pineapple juice for a different citrus twist.
- Basting: Frequent basting ensures a glossy, flavorful crust.
- Leftovers: Use leftover ham in sandwiches, soups, or omelets.
- Storage: Store leftover ham in an airtight container in the fridge for up to 4 days.
