Instructions

1

Slice the chicken breasts into thin strips. Set aside.

2

Slice the bell peppers and onion into thin strips.

3

In a small bowl, mix chili powder, cumin, paprika, garlic powder, salt, and black pepper to make the fajita seasoning.

4

Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the chicken strips and sprinkle half of the seasoning. Cook for 5-6 minutes until browned and cooked through. Remove from the skillet and set aside.

5

In the same skillet, add the remaining 1 tbsp olive oil. Add the bell peppers and onions, then sprinkle the remaining seasoning. Cook for 5-6 minutes until softened but still slightly crisp.

6

Return the chicken to the skillet and stir everything together. Cook for another 1-2 minutes to combine flavors.

7

Warm the tortillas in a dry skillet or microwave for 20 seconds.

8

Serve the chicken and vegetable mixture in warm tortillas. Garnish with fresh cilantro and a squeeze of lime if desired.

Chef's Tips

  • Marinate for Extra Flavor: For deeper flavor, marinate the chicken in the seasoning and a bit of lime juice for 30 minutes before cooking.
  • High Heat is Key: Cook the chicken and vegetables on high heat to get a nice sear and prevent them from becoming soggy.
  • Tortilla Options: Use corn tortillas for a gluten-free option or whole wheat tortillas for extra fiber.
  • Extra Toppings: Add sour cream, guacamole, shredded cheese, or salsa for extra flavor.
  • Leftovers: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet to maintain texture.
