Activate the yeast: In a small bowl, mix warm milk, a pinch of sugar, and yeast. Let it sit for 5-10 minutes until frothy.
Prepare the dough: In a large bowl, combine flour, sugar, and salt. Add the yeast mixture, eggs, melted butter, and vanilla. Mix until a soft dough forms.
Knead the dough: Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1-2 hours until doubled in size.
Shape the sufganiyot: Roll out the dough to 1/2-inch thickness. Use a round cutter to cut out circles. Cover and let rise for another 30 minutes.
Fry the doughnuts: Heat vegetable oil to 350°F (175°C). Fry the doughnuts in batches for 1-2 minutes per side until golden brown. Drain on paper towels.
Fill with chocolate: Once cooled slightly, use a piping bag to fill each sufganiyah with chocolate ganache or Nutella. Dust with powdered sugar before serving.
