- 1 whole chicken (about 4 lbs)
- 2 tbsp olive oil
- 1 tbsp salt
- 1 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 lemon, halved
- 4 garlic cloves, crushed
- 1 onion, quartered

Instructions
Preheat the oven to 425°F (220°C). Remove the chicken from the fridge and let it sit at room temperature for 30 minutes.
Pat the chicken dry with paper towels, inside and out. This helps achieve crispy skin.
Rub the chicken all over with olive oil. Season generously with salt, black pepper, thyme, and rosemary, including inside the cavity.
Stuff the cavity with the halved lemon, crushed garlic, and quartered onion. Tie the legs together with kitchen twine.
Place the chicken breast-side up on a roasting rack in a roasting pan. Roast in the preheated oven for 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C) at the thickest part of the thigh.
Remove the chicken from the oven and let it rest for 15 minutes before carving. This allows the juices to redistribute.
Carve the chicken and serve with your favorite sides.
