Ingredients
- 1 cup dried lentils
- 8 small corn tortillas
- 1 avocado
- 1 lime
- 1 red onion
- 1 bell pepper
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- 2 tbsp olive oil

Instructions
Cook the lentils: Rinse the lentils and cook them in boiling water for about 15-20 minutes until tender. Drain and set aside.
Prepare the veggies: Dice the red onion and bell pepper. Heat 1 tbsp olive oil in a pan and sauté them until softened, about 5 minutes.
Season the lentils: Add the cooked lentils to the pan with the veggies. Stir in cumin, smoked paprika, chili powder, salt, and pepper. Cook for another 3-4 minutes.
Make the avocado sauce: Mash the avocado in a bowl. Squeeze in lime juice, add a pinch of salt, and mix well.
Warm the tortillas: Heat the tortillas in a dry pan for about 30 seconds on each side until warm and slightly crispy.
Assemble the tacos: Spread a spoonful of avocado sauce on each tortilla. Top with the lentil mixture and garnish with chopped cilantro.
Serve immediately with extra lime wedges on the side.
