Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Prepare the asparagus: Trim the tough ends off the asparagus. Toss with 1 tbsp olive oil, minced garlic, salt, and black pepper.
Season the salmon: Pat the salmon fillets dry with paper towels. Drizzle with remaining olive oil, then sprinkle with salt, black pepper, and dried dill.
Arrange on baking sheet: Place the salmon fillets in the center of the baking sheet. Surround them with the seasoned asparagus.
Add lemon: Slice the lemon and place 2-3 slices on top of each salmon fillet. Squeeze juice from remaining lemon over the asparagus.
Bake: Place in the preheated oven and bake for 12-15 minutes, until salmon flakes easily with a fork and asparagus is tender.
Serve: Remove from oven and let rest for 2 minutes before serving. Garnish with fresh dill if desired.
Chef's Tips
- Freshness Check: For best results, use fresh salmon with bright color and no fishy smell.
- Skin On: Leaving the skin on during baking helps keep the salmon moist. You can easily remove it after cooking if preferred.
- Even Cooking: Make sure salmon fillets are similar thickness for even cooking.
- Vegetable Swap: Substitute asparagus with green beans or broccoli if desired.
- Don't Overcook: Salmon continues cooking after removal from oven, so take it out when slightly underdone.
- Storage: Leftovers can be refrigerated for up to 2 days. Reheat gently to prevent drying out.
