Instructions
Preheat the oven to 400°F (200°C). Lightly grease a baking dish with olive oil or line it with parchment paper.
Pat the cod fillets dry with paper towels to remove excess moisture. This helps the fish cook evenly and develop a nice texture.
Place the cod fillets in the prepared baking dish. Drizzle with olive oil and rub minced garlic evenly over the fillets.
Season the cod with salt, black pepper, dried thyme, and dried parsley. Arrange lemon slices on top of each fillet.
Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Remove from the oven and garnish with fresh parsley. Serve immediately with additional lemon wedges if desired.
Chef's Tips
- Fresh Herbs: Substitute dried herbs with fresh thyme and parsley for a more vibrant flavor.
- Even Cooking: Ensure fillets are of similar thickness for uniform cooking. If one end is thicker, tuck it under slightly.
- Extra Flavor: Add a splash of white wine or capers to the baking dish before cooking for additional depth.
- Don't Overcook: Cod cooks quickly. Check for doneness a minute or two before the recommended time to prevent dryness.
- Sides: Pair with roasted vegetables, rice, or a fresh green salad for a complete meal.
