Instructions
Heat oil in a large pot over medium heat. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove and set aside.
In the same pot, add onions and cook until translucent, about 5 minutes. Add garlic and cook for 1 more minute.
Stir in paprika, caraway seeds, marjoram, and bay leaf. Cook for 1 minute to release the flavors.
Return the beef to the pot. Add beef broth, bell peppers, tomatoes, carrots, salt, and black pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for 1 hour 30 minutes, stirring occasionally.
Add potatoes and tomato paste. Continue simmering for another 30 minutes or until beef and vegetables are tender.
Adjust seasoning if needed. Remove bay leaf before serving.
Chef's Tips
- Paprika Quality: Use high-quality Hungarian sweet paprika for authentic flavor.
- Slow Cooking: For best results, cook on low heat for a longer time to tenderize the beef.
- Vegetable Variations: Add other root vegetables like parsnips or turnips if desired.
- Serving Suggestion: Serve with crusty bread or dumplings to soak up the rich broth.
- Storage: Goulash tastes even better the next day. Store in the fridge for up to 3 days.
