- 500g potatoes (floury type)
- 250g quark (German fresh cheese)
- 1 egg
- 50g flour
- 1 tbsp sugar
- 1 pinch of salt
- Butter or oil for frying
- Applesauce or cinnamon sugar for serving

Peel the potatoes and grate them finely. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
In a large bowl, mix the squeezed potatoes with quark, egg, flour, sugar, and a pinch of salt until well combined.
Heat butter or oil in a large frying pan over medium heat.
Take spoonfuls of the potato mixture and form small patties. Place them in the hot pan and flatten slightly.
Fry the Quarkkeulchen for about 3-4 minutes on each side until golden brown and crispy.
Remove from pan and drain on paper towels. Serve warm with applesauce or sprinkled with cinnamon sugar.
