Instructions

1

Peel the potatoes and grate them finely. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.

2

In a large bowl, mix the squeezed potatoes with quark, egg, flour, sugar, and a pinch of salt until well combined.

3

Heat butter or oil in a large frying pan over medium heat.

4

Take spoonfuls of the potato mixture and form small patties. Place them in the hot pan and flatten slightly.

5

Fry the Quarkkeulchen for about 3-4 minutes on each side until golden brown and crispy.

6

Remove from pan and drain on paper towels. Serve warm with applesauce or sprinkled with cinnamon sugar.

Chef's Tips

  • Potato Prep: Use starchy potatoes for best results as they bind better.
  • Consistency: The mixture should be thick enough to hold its shape when formed into patties.
  • Serving Suggestion: These are traditionally served as a sweet dish but can also be made savory by omitting the sugar.
  • Storage: Best eaten fresh, but can be reheated in a pan or oven.
  • Variation: Add a pinch of cinnamon or vanilla sugar to the batter for extra flavor.
