Instructions

1

Rinse the sushi rice under cold water until the water runs clear. Cook the rice with water in a rice cooker or pot according to package instructions.

2

While the rice cooks, prepare the sushi vinegar by mixing rice vinegar, sugar, and salt in a small bowl until dissolved.

3

Once the rice is cooked, transfer it to a large wooden or glass bowl. Gently fold in the sushi vinegar mixture while fanning the rice to cool it down.

4

Prepare all your fillings: slice the fish, avocado, and julienne the cucumber and carrot. Have everything ready for assembly.

5

Take a half sheet of nori and hold it in your hand. Spread about 1/4 cup of sushi rice over one half of the nori, leaving about 1 inch at the top edge.

6

Add your choice of fillings diagonally across the rice. Be careful not to overfill.

7

Roll the nori into a cone shape, starting from the bottom corner and rolling diagonally. Use a grain of rice to seal the edge if needed.

8

Serve immediately with wasabi, pickled ginger, and soy sauce on the side.

Chef's Tips

  • Rice Texture: The rice should be slightly sticky but not mushy. Proper rinsing and vinegar mixture are key to perfect sushi rice.
  • Freshness Matters: Always use the freshest possible fish for temaki. Ask your fishmonger for sashimi-grade fish.
  • Customization: Feel free to add other fillings like crab sticks, tempura shrimp, or cream cheese.
  • Nori Tips: Keep nori sheets in an airtight container to maintain crispness. If they become soft, you can briefly toast them over a flame.
  • Assembly Line: Prepare all ingredients before starting to roll for easier assembly.
  • Eating Fresh: Temaki is best eaten immediately after making as the nori will soften over time.
  • Kids Friendly: Let kids assemble their own temaki with their favorite fillings for a fun meal.
